Ingredients

The following ingredients have 8 Servings
  • 425g canned apples
  • 1 tbs caster sugar
  • 2 tbs water
  • 3 tsp caster sugar
  • 2 eggs
  • 1/3 cup caster sugar
  • 1/3 cup cornflour
  • 1/4 cup self-raising flour

Instruction

  • Simmer apples, sugar and water in a covered saucepan for about 5 minutes, or until apples are tender. Keep hot while preparing sponge topping.
  • Beat eggs in small bowl with electric mixer until thick and creamy, add sugar gradually and beat until dissolved. Lightly fold in sifted flours.
  • Pour hot apples and liquid into ovenproof dish. Quickly spread sponge topping over apples, sprinkle with extra sugar.
  • Bake at 180C for approximately 20 minutes or until sponge feels firm to the touch and is lightly browned.
  • Serve with cream or ice-cream.
