Ingredients

The following ingredients have 4 Servings
  • 340 g buttercake cake mix
  • 1 cup coconut
  • 125 g butter melted
  • 825 g canned pie apple
  • 300 g sour cream
  • 1/2 tsp lemon rind, finely grated
  • 1/2 tsp ground cinnamon
  • 2 eggs lightly beaten

Instruction

  • Grease a 20 x 30 cm lamington pan and line with paper .
  • Mix coconut, butter and cake mix together and press into cake pan.
  • Bake at 180C for 15 minutes or until light brown. Cool slightly.
  • Spread apples over the base.
  • Whisk sour cream, rind and eggs in a bowl until smooth and pour mixture over apples.
  • Continue to bake for 30 minutes.
  • Refrigerate until cooled and then cut into squares and sprinkle with cinnamon.
