Ingredients
The following ingredients have 4 Servings
- 340 g buttercake cake mix
- 1 cup coconut
- 125 g butter melted
- 825 g canned pie apple
- 300 g sour cream
- 1/2 tsp lemon rind, finely grated
- 1/2 tsp ground cinnamon
- 2 eggs lightly beaten
Instruction
- Grease a 20 x 30 cm lamington pan and line with paper .
- Mix coconut, butter and cake mix together and press into cake pan.
- Bake at 180C for 15 minutes or until light brown. Cool slightly.
- Spread apples over the base.
- Whisk sour cream, rind and eggs in a bowl until smooth and pour mixture over apples.
- Continue to bake for 30 minutes.
- Refrigerate until cooled and then cut into squares and sprinkle with cinnamon.
