Ingredients

The following ingredients have 4 Servings
  • ½ cup unsalted butter (at room temperature )
  • 1 cup granulated white sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup all purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 cup peeled & diced small apples (this was 2 Gala apples for me)
  • ½ cup peanut butter chips
  • ¼ cup light brown sugar (optional)

Instruction

  • Preheat the oven to 350° F and spray an 8 x 8 baking dish with non-stick spray. Set aside.
  • In a large bowl (or the bowl of your stand mixer), add the butter, sugar, egg, and vanilla and beat until fluffy.
  • In another medium bowl, add the flour, salt, baking powder, baking soda, cinnamon, and nutmeg and whisk together.
  • Pour the dry mixture into the wet mixture and stir with a spatula until just blended.
  • Fold in the diced apples and peanut butter chips.
  • Spread the batter evenly into your prepared pan.
  • Sprinkle the light brown sugar over the top.
  • Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool on a rack before slicing.
