Ingredients
The following ingredients have 4 Servings
- 1 cup all-purpose or gluten free flour
- 1 cup old-fashioned oats
- ½ cup light brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 large egg
- 1 cup almond milk
- ¼ cup light tasting oil of your choice (like olive or grapeseed)
- 1 teaspoon vanilla extract
- 1½ cup apples (peeled cored & chopped (about 1½ medium apples))
- Additional oats for topping
Instruction
- Preheat oven to 400° F. Spray a 12-count muffin tin with cooking spray or line with paper liners and spray the inside of the liners with cooking spray, and set aside.
- In a large bowl, combine flour, oats, brown sugar, cinnamon, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the egg, almond milk, oil, and vanilla.
- Add the wet ingredients to the dry ingredients, stirring just until combined. Fold in the chopped apple, and divide evenly between the 12 muffin cups.
- Sprinkle about 1 teaspoon of old-fashioned oats over the top of each muffin. Bake for 15 to 20 minutes until a toothpick inserted into the center of the muffins comes out clean.
