Ingredients

The following ingredients have 4 Servings
  • 1 cup all-purpose or gluten free flour
  • 1 cup old-fashioned oats
  • ½ cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup almond milk
  • ¼ cup light tasting oil of your choice (like olive or grapeseed)
  • 1 teaspoon vanilla extract
  • 1½ cup apples (peeled cored & chopped (about 1½ medium apples))
  • Additional oats for topping

Instruction

  • Preheat oven to 400° F. Spray a 12-count muffin tin with cooking spray or line with paper liners and spray the inside of the liners with cooking spray, and set aside.
  • In a large bowl, combine flour, oats, brown sugar, cinnamon, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the egg, almond milk, oil, and vanilla.
  • Add the wet ingredients to the dry ingredients, stirring just until combined. Fold in the chopped apple, and divide evenly between the 12 muffin cups.
  • Sprinkle about 1 teaspoon of old-fashioned oats over the top of each muffin. Bake for 15 to 20 minutes until a toothpick inserted into the center of the muffins comes out clean.
