Ingredients

The following ingredients have 4 Servings
  • 1 cup green cabbage (shredded)
  • 1/2 cup red cabbage (shredded)
  • 2 cups raw kale (shredded)
  • 2 carrots (shredded)
  • 1 apple (peeled, cored, and sliced)
  • 1/4 cup almonds (slivered)
  • 1/4 cup fresh blueberries
  • 1/4 cup extra virgin olive oil
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. raw honey
  • 1 tbsp. lemon juice
  • Sea salt and freshly ground black pepper

Instruction

  • In a salad bowl, combine the green cabbage, red cabbage, carrots, kale, apple, and blueberries.
  • In a bowl, whisk the olive oil, apple cider vinegar, honey, and lemon juice; season to taste with salt and pepper.
  • Drizzle the vinaigrette over the kale salad and toss until well blended.
  • Serve the salad topped with slivered almonds.
