Ingredients
The following ingredients have 4 Servings
- 1 cup green cabbage (shredded)
- 1/2 cup red cabbage (shredded)
- 2 cups raw kale (shredded)
- 2 carrots (shredded)
- 1 apple (peeled, cored, and sliced)
- 1/4 cup almonds (slivered)
- 1/4 cup fresh blueberries
- 1/4 cup extra virgin olive oil
- 2 tbsp. apple cider vinegar
- 2 tbsp. raw honey
- 1 tbsp. lemon juice
- Sea salt and freshly ground black pepper
Instruction
- In a salad bowl, combine the green cabbage, red cabbage, carrots, kale, apple, and blueberries.
- In a bowl, whisk the olive oil, apple cider vinegar, honey, and lemon juice; season to taste with salt and pepper.
- Drizzle the vinaigrette over the kale salad and toss until well blended.
- Serve the salad topped with slivered almonds.
