Ingredients

The following ingredients have 2 Servings
  • 1 tablespoon minced fresh thyme
  • 2 teaspoons honey
  • 2 tablespoons butter, softened
  • 4 slices challah or sourdough bread
  • 2 tablespoons prepared basil pesto, plus more for topping (jarred or fresh works here)
  • 4 slices smoked gouda cheese
  • 2 slices provolone cheese
  • 4-6 thin slices turkey breast
  • 1 large honeycrisp apple, cored and thinly sliced
  • Additional thyme for serving, optional

Instruction

  • In a small bowl, combine softened butter, honey, and thyme until creamy. Spread the outside of each slice of bread with thyme butter. Spread inside of half of bread slices with 2 tablespoons pesto.
  • On top of the pesto, begin layering cheeses, turkey slices, and apple slices. Drizzle a little extra pesto over top and add top piece of bread, butter side facing up.
  • Heat a panini press or large skillet over medium-high heat. Cook the sandwiches one at a time in panini press or skillet until cheese is melted and bread is golden brown, about 3-5 minutes. (flip paninis once if using skillet) Cut sandwiches in half and serve immediately with additional fresh thyme on top if desired. Enjoy!
