- 1 1/2 cups all-purpose flour
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- 1/2 cup unsalted butter (room temperature)
- 3/4 cup brown sugar (packed)
- 1/4 cup sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- zest of 1 lemon
- 1 pound apples (roughly chopped and loosely packed, about 2 1/2 cups chopped apples)
- 1/4 cup unsalted butter (room temperature)
- 8 ounces cream cheese (room temperature)
- 2 teaspoons vanilla extract
- 4 cups powdered sugar
Instruction
- Preheat oven to 350 F.
- In a medium-sized bowl, whisk flour, baking powder, baking soda, and cinnamon, ginger, nutmeg, cloves, and allspice.
- Beat butter and sugars in a large bowl until light and fluffy.
- Beat in eggs, sour cream, vanilla extract, and lemon zest until blended.
- Mix in flour mixture a little bit at a time until just combined.
- Fold in apples.
- Divide batter evenly among 12 cupcake liners (they will be filled almost all the way to the top).
- Bake for about 25 minutes or until a toothpick comes out clean.
