Ingredients

The following ingredients have 4 Servings
  • 1 1/2 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1/2 cup unsalted butter (room temperature)
  • 3/4 cup brown sugar (packed)
  • 1/4 cup sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • zest of 1 lemon
  • 1 pound apples (roughly chopped and loosely packed, about 2 1/2 cups chopped apples)
  • 1/4 cup unsalted butter (room temperature)
  • 8 ounces cream cheese (room temperature)
  • 2 teaspoons vanilla extract
  • 4 cups powdered sugar

Instruction

  • Preheat oven to 350 F.
  • In a medium-sized bowl, whisk flour, baking powder, baking soda, and cinnamon, ginger, nutmeg, cloves, and allspice.
  • Beat butter and sugars in a large bowl until light and fluffy.
  • Beat in eggs, sour cream, vanilla extract, and lemon zest until blended.
  • Mix in flour mixture a little bit at a time until just combined.
  • Fold in apples.
  • Divide batter evenly among 12 cupcake liners (they will be filled almost all the way to the top).
  • Bake for about 25 minutes or until a toothpick comes out clean.
