Ingredients
The following ingredients have 6 Servings
- For the Pancakes:
- 4 eggs
- 1/2 cup unsweetened applesauce
- 1/2 cup full fat coconut milk - from a can (blended prior to adding)
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1/2 cup coconut flour
- 1/4 cup tapioca flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder*
- 1 + 1/2 tsp ground cinnamon
- 1/4 tsp sea salt
- coconut oilto grease pan (1-2 tbsp or as needed)
- 2 large apples - I used pink lady but any cooking apple will work - peeled and sliced or chopped
- 1-2 Tbsp coconut oil
- 1 tbsp pure maple syrup
- 3 Tbsp water
- 1/2 tsp ground cinnamon
- Pinch sea salt
