Ingredients

The following ingredients have 6 Servings
  • For the Pancakes:
  • 4 eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 cup full fat coconut milk - from a can (blended prior to adding)
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup coconut flour
  • 1/4 cup tapioca flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder*
  • 1 + 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt
  • coconut oilto grease pan (1-2 tbsp or as needed)
  • 2 large apples - I used pink lady but any cooking apple will work - peeled and sliced or chopped
  • 1-2 Tbsp coconut oil
  • 1 tbsp pure maple syrup
  • 3 Tbsp water
  • 1/2 tsp ground cinnamon
  • Pinch sea salt
