Ingredients

The following ingredients have 4 Servings
  • 2 cups oat milk
  • 1 large egg
  • 1/2 tablespoon vanilla extract
  • 2 mcintosh apples, peeled, cored, thinly diced ((1 cup))
  • 1/4 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups quick oats
  • 1/2 cup chopped pecans
  • cooking spray
  • (optional garnish) confectioner's sugar, cinnamon or chopped pecans

Instruction

  • Start by preheating the oven to 375 degrees F. Add the oat milk, egg and vanilla to a medium bowl and whisk until smooth.
  • Next, peel, core and thinly slice the apples into thin pieces. Add the apples to the bowl along with the brown sugar, cinnamon, oats and pecans; mix well.
  • Spray a 2-quart oven safe baking dish with cooking spray and add the oatmeal mixture. Place the dish in the oven and cook for 40-45 minutes until the oatmeal has cooked, puffed up and the inside isn't "wet" when you stick a toothpick inside at the center.
  • Serve this Apple Cinnamon Baked Oatmeal as is or sprinkle with an additional garnish like confectioners sugar, cinnamon or chopped pecans.
