Ingredients
The following ingredients have 4 Servings
- 8 large apples, (such as Granny Smith, Honeycrisp, Golden Delicious, Jonagold), peeled, cored and chopped into small pieces (Footnote)
- 2 tbsp. freshly squeezed lemon juice
- 1 cup brown sugar, such as demerara
- 2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/8 tsp. ground ginger
- 3 tbsp. cornstarch
- 3 tbsp. butter, cubed
- 1 1/2 cups sharp Cheddar cheese, grated
- 2 large (9-inch) pie crusts (see Recipe)
- 1 tbsp. milk, for brushing
Instruction
- Preheat oven to 450ºF.
- Core and peel the apples and cut them into small pieces; add to a large bowl. Add lemon juice and mix well. Add the rest of the ingredients and stir gently until well blended.
- Place a pie crust into a greased and floured pie plate.
- Add the apple mixture and place another crust on top. Crimp the edges, brush on a little milk and make a few small incisions to let the steam escape. Add a pie crust shield or foil to protect the crust.
- Transfer the pie to the preheated oven and bake for 30 minutes or until golden brown. About 10 minutes before the end, remove the pie crust shield.
- Serve warm with Vanilla Ice Cream.
