Ingredients

The following ingredients have 12 Servings
  • 2 1/4 cups white whole wheat flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 3 eggs
  • 1/2 cup melted coconut oil (or butter)
  • 1 1/4 cups maple syrup
  • 1 lb apples (peeled, cored, and diced (2 medium apples))
  • 1 cup diced nuts (optional)

Instruction

  • Preheat the oven to 350 degrees and grease a 9 by 13 inch pan.
  • In a small bowl, stir together the flour, baking soda, salt, cinnamon, ginger, and nutmeg. Set aside.
  • In a large mixing bowl, combine the eggs, coconut oil, and maple syrup. Add the dry ingredients to the big bowl, and mix to combine.
  • Stir in the diced apples (and nuts if you’re using them).
  • Transfer the batter to the baking dish, and bake for 35 to 40 minutes. A toothpick inserted in the center of the cake should come out clean.
  • For an extra treat, brush a bit of maple syrup on the cake and sprinkle a little cinnamon on top as the cake is cooling.
