Ingredients
The following ingredients have 12 Servings
- 2 1/4 cups white whole wheat flour
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 3 eggs
- 1/2 cup melted coconut oil (or butter)
- 1 1/4 cups maple syrup
- 1 lb apples (peeled, cored, and diced (2 medium apples))
- 1 cup diced nuts (optional)
Instruction
- Preheat the oven to 350 degrees and grease a 9 by 13 inch pan.
- In a small bowl, stir together the flour, baking soda, salt, cinnamon, ginger, and nutmeg. Set aside.
- In a large mixing bowl, combine the eggs, coconut oil, and maple syrup. Add the dry ingredients to the big bowl, and mix to combine.
- Stir in the diced apples (and nuts if you’re using them).
- Transfer the batter to the baking dish, and bake for 35 to 40 minutes. A toothpick inserted in the center of the cake should come out clean.
- For an extra treat, brush a bit of maple syrup on the cake and sprinkle a little cinnamon on top as the cake is cooling.
