Ingredients

The following ingredients have 4 Servings
  • 1 cup self-raising flour (sifted)
  • ½ cup ground almonds ((almond meal))
  • ⅔ cup caster sugar
  • 120 grams softened butter (cut into small pieces)
  • 2 eggs
  • ½ cup buttermilk
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 large apple (cored and sliced)
  • 2 tbsp brown sugar (or demerara sugar)

Instruction

  • Preheat the oven for 160 degrees Celsius (325 Fahrenheit) and prepare a 20cm springform cake tin.
  • In a electric mixer, with a paddle attachment fitted, add all of the ingredients except the apple and demerara sugar and mix until just combined. Pour the mixture into the springform tin.
  • Top with the sliced apple and sprinkle with sugar.
  • Bake for 45 minutes or until the cake is cooked through.
