Ingredients
The following ingredients have 4 Servings
- For Salad
- 8 oz of Arugula (cleaned and dried)
- 1/2 Club of Cherry Tomatoes
- 1/2 Cup of Yellow Tomatoes
- 1/2 Cup of Corn
- 4 Sticks of Hearts of Palm (sliced)
- 1/2 Cucumber (sliced)
- 1 Granny Smith Apple (sliced)
- For Dijon Vinaigrette
- 1/2 Cup of Olive Oil
- 1/4 Cup of Rice Vinegar
- 1 Teaspoon of sugar
- 2 teaspoons of Dijon Mustard (I like they grainy one)
- 1/8 of an onion
- Salt and Pepper
Instruction
- For Salad
- Combine all ingredients together
- For Dijon Vinaigrette
- Place all ingredients together in a blender and blend until creamy and combined
- Assembly:
- Place little by little the dijon vinaigrette into the salad until desired flavor is achieved. This vinaigrette is enough to make 2-3 salads so you probably won't use it entirely
- Save the rest of the vinaigrette in the fridge
- Enjoy!
