Ingredients

The following ingredients have 4 Servings
  • For Salad
  • 8 oz of Arugula (cleaned and dried)
  • 1/2 Club of Cherry Tomatoes
  • 1/2 Cup of Yellow Tomatoes
  • 1/2 Cup of Corn
  • 4 Sticks of Hearts of Palm (sliced)
  • 1/2 Cucumber (sliced)
  • 1 Granny Smith Apple (sliced)
  • For Dijon Vinaigrette
  • 1/2 Cup of Olive Oil
  • 1/4 Cup of Rice Vinegar
  • 1 Teaspoon of sugar
  • 2 teaspoons of Dijon Mustard (I like they grainy one)
  • 1/8 of an onion
  • Salt and Pepper

Instruction

  • For Salad
  • Combine all ingredients together
  • For Dijon Vinaigrette
  • Place all ingredients together in a blender and blend until creamy and combined
  • Assembly:
  • Place little by little the dijon vinaigrette into the salad until desired flavor is achieved. This vinaigrette is enough to make 2-3 salads so you probably won't use it entirely
  • Save the rest of the vinaigrette in the fridge
  • Enjoy!
