Ingredients

The following ingredients have 7 Servings
  • Olive oil
  • 3-6 pieces thick-cut bacon ((6+ for regular))
  • 1 small onion; thinly sliced
  • 1 garlic clove; thinly sliced
  • Pinch of Red pepper flakes; + if you like it spicy
  • 3 cans diced tomatoes; undrained
  • 1 cup frozen peas
  • Salt/pepper; to taste-generous
  • 1 lb . angel hair pasta
  • Pasta water--just a bit
  • Parmesan cheese
  • Parsley or basil; chopped for garnish (, optional)

Instruction

  • Bring a large pot of water to boil, once boiling, salt generously.
  • Cook pasta one according to package directions reserving about a cup of pasta water.
  • Meanwhile, cook and crumble the bacon, set aside. (For extra flavor, reserve some drippings to cook the onions)
  • In a skillet, sauté the onion and garlic in olive oil (or bacon renderings) until onions are thoroughly cooked, about 5 minutes-add pepper flakes towards the end.
  • Add all 3 cans of tomatoes with juice, mix thoroughly.
  • Return the bacon to the pan, and stir in the peas, salt, and pepper. Bring to low simmer and cook until everything is warm; about 2-3 minutes.
  • Add cooked pasta straight to sauce with a bit of the pasta water until it reaches the desired thinness, about 1/4 a cup.
  • Top with Parmesan cheese and parsley or basil.
