Ingredients
The following ingredients have 12 Servings
- 1 pound(s) sliced bacon, diced
- 1 medium sweet onion, chopped
- 6 - eggs, lightly beaten
- 4 cup(s) frozen shredded hash brown potatoes, thawed
- 2 cup(s) shredded cheddar cheese
- 1 1/2 cup(s) cottage cheese
- 1 1/4 cup(s) shredded swiss cheese
Instruction
- Preheat oven to 350*. Cook bacon until crisp (I used the oven method). Drain and dice. Combine chopped onion, eggs, hash browns, shredded cheddar, cottage cheese and shredded swiss cheese in large mixing bowl. Stir in bacon.
- Transfer into a 13x9-inch baking dish, greased. I line dish with aluminum foil and then spray for easy cleanup.
- Bake in preheated oven for 35 to 40 minutes or when knife inserted in center comes out clean. Let stand for 10 minutes and serve. 7 points per serving
