The following ingredients have 4 Servings
  • 1 bunch kale (organic, chopped )
  • 1/2 small red onion
  • 1 cup pomegranate seeds
  • 1/2 cup almonds (chopped (toasted, if desired))
  • 1/3 cup olive oil
  • 2 tablespoons apple cider
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • salt and pepper (to taste)
  • 12 oz salmon (wild-caught, cut into 4 slices - I like to buy my salmon from Butcherbox)
  • 1 egg
  • 2 tablespoons olive oil
  • 1/3 cup almonds (blended in a blender until finely ground)
  • 1/3 cup parmesan cheese (finely grated)
  • 1 tablespoon dried basil
  • 1 teaspoon garlic powder
  • salt and pepper (to taste)
