Ingredients
The following ingredients have 2 Servings
- 1 small banana, (mashed)
- 1 egg
- 3 Tablespoons Meridian almond butter
- 1 Tablespoon maple syrup, (agave or honey (I used maple syrup))
- 1/4 teaspoon vanilla extract ((you could also try almond or orange extract))
- 2 Tablespoons almond flour
- 1/4 teaspoon baking powder
- Garnish: 1 or 2-oz Sue Gilmours Orange Chili Dark Chocolate, (melted for drizzle or fresh raspberries)
Instruction
- In a medium bowl, combine mashed banana with egg, almond butter, syrup and vanilla extract, mixing well.
- Stir in almond flour & baking soda until there are no lumps.
- Spray 2 ramekins or mugs with nonstick spray. Divide mixture between them filling about 2/3 full.
- Place in microwave and cook on high for 2-1/2 minutes. Remove and drizzle melted chocolate on top. Let rest for about 5 minutes before serving.
- Note: To melt chocolate, chop & place in bowl. Microwave in 30 second increments, stirring in-between until melted.
