Ingredients

The following ingredients have 2 Servings
  • 1 small banana, (mashed)
  • 1 egg
  • 3 Tablespoons Meridian almond butter
  • 1 Tablespoon maple syrup, (agave or honey (I used maple syrup))
  • 1/4 teaspoon vanilla extract ((you could also try almond or orange extract))
  • 2 Tablespoons almond flour
  • 1/4 teaspoon baking powder
  • Garnish: 1 or 2-oz Sue Gilmours Orange Chili Dark Chocolate, (melted for drizzle or fresh raspberries)

Instruction

  • In a medium bowl, combine mashed banana with egg, almond butter, syrup and vanilla extract, mixing well.
  • Stir in almond flour & baking soda until there are no lumps.
  • Spray 2 ramekins or mugs with nonstick spray. Divide mixture between them filling about 2/3 full.
  • Place in microwave and cook on high for 2-1/2 minutes. Remove and drizzle melted chocolate on top. Let rest for about 5 minutes before serving.
  • Note: To melt chocolate, chop & place in bowl. Microwave in 30 second increments, stirring in-between until melted.
