Ingredients

The following ingredients have 4 Servings
  • 1.6 cups plain flour
  • 1/2 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 3/4 cup soft butter
  • 1 cup brown sugar firmly packed
  • 1 egg
  • 1 tsp vanilla essence
  • 3/4 cup almonds chopped
  • 3/4 cup dried apricots chopped

Instruction

  • In a large bowl, cream butter and brown sugar.
  • Beat in egg and vanilla essence.
  • In a separate bowl stir in the sifted flour, bicarbonate of soda and salt.
  • Add the flour mixture to the butter mixture and then add almonds and apricots.
  • Drop rounded teaspoons of mixture onto a baking tray lined with baking paper.
  • Bake in a a pre-heated 175C oven for 10 to 12 minutes until golden brown.
  • Cool on wire racks.
