Ingredients
The following ingredients have 4 Servings
- 1.6 cups plain flour
- 1/2 tsp bicarbonate of soda
- 1/4 tsp salt
- 3/4 cup soft butter
- 1 cup brown sugar firmly packed
- 1 egg
- 1 tsp vanilla essence
- 3/4 cup almonds chopped
- 3/4 cup dried apricots chopped
Instruction
- In a large bowl, cream butter and brown sugar.
- Beat in egg and vanilla essence.
- In a separate bowl stir in the sifted flour, bicarbonate of soda and salt.
- Add the flour mixture to the butter mixture and then add almonds and apricots.
- Drop rounded teaspoons of mixture onto a baking tray lined with baking paper.
- Bake in a a pre-heated 175C oven for 10 to 12 minutes until golden brown.
- Cool on wire racks.
