Ingredients

The following ingredients have 6 Servings
  • 3 cup(s) fresh lump crabmeat
  • 4 tablespoon(s) butter, unsalted
  • 1/2 cup(s) celery, finely chopped
  • 1/2 cup(s) bell pepper, finely chopped
  • 1/2 cup(s) onion, finely chopped
  • 3/4 cup(s) cracker crumbs
  • 1/2 cup(s) clam juice
  • 1/2 teaspoon(s) kosher salt
  • 1/2 teaspoon(s) hot pepper sauce
  • 3 teaspoon(s) dry mustard, i prefer coleman's
  • 1 teaspoon(s) worcestershire sauce
  • 2 tablespoon(s) dry sherry
  • 4 large eggs
  • - butter, melted for brushing top of casserole

Instruction

  • Saute` celery, onion and bell pepper in butter. Add cracker crumbs, milk, clam juice, salt, pepper sauce, mustard and Worcestershire sauce.
  • Cook until thick. Remove from heat and beat in eggs and sherry.
  • Add crabmeat and pour into a buttered casserole dish or individual ramekins. Brush with melted butter and bake for 10-12 minutes in a 400-degree oven.
