Ingredients

The following ingredients have 4 Servings
  • 1 medium eggplant, peeled and cut into 1 1/2 inch cubes
  • 3 minced garlic cloves
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 red bell peppers or a combination of red and yellow ( if you can find fresh paprikas certainly use them )
  • 1 heaping tablespoon diced serrano or jalapeno pepper
  • 2 cloves garlic, minced
  • 1 cup diced onion
  • 1 tablespoon dried sweet paprika powder
  • 1/2 cup plus 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • The roasted eggplant cubes
  • Additional salt and olive oil for adjustment, if necessary
