Ingredients
The following ingredients have 4 Servings
- 1 medium eggplant, peeled and cut into 1 1/2 inch cubes
- 3 minced garlic cloves
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 red bell peppers or a combination of red and yellow ( if you can find fresh paprikas certainly use them )
- 1 heaping tablespoon diced serrano or jalapeno pepper
- 2 cloves garlic, minced
- 1 cup diced onion
- 1 tablespoon dried sweet paprika powder
- 1/2 cup plus 2 tablespoons extra virgin olive oil
- 1 teaspoon salt
- The roasted eggplant cubes
- Additional salt and olive oil for adjustment, if necessary
