- ½ cup all-purpose flour
- 2 eggs
- 2 tbsp milk
- ½ tsp sea salt
- 1½ cups panko breadcrumbs
- 6 tbsp grated parmesan cheese
- ½ tsp Italian seasoning
- ¼ tsp dried basil
- ½ tsp sea salt
- ⅛ black pepper ((to taste))
Instruction
- Set up three dishes and put them in the right order. (1st bowl) fill with flour. (2nd bowl) beat eggs with milk and salt. (3rd bowl) mix breadcrumbs with parmesan cheese, Italian seasoning, dried basil, salt, and black pepper.
- Coat a zucchini stick in the flour; shake off excess flour. Dip in the egg; allow the excess to drip off. Dip into breadcrumb mixture; gently pressing to coat and shake off any excess. It's very important to coat zucchini in a thin, even layer of each coating and always shake off any excess.
- Put coated zucchini on a baking sheet in a single layer, top with parchment paper, and repeat with remaining pieces. Next, chill in the fridge for 15 minutes.
- Lightly grease the air fryer basket with cooking spray. Place zucchini sticks in a single layer and lightly spray them with cooking spray.Do not overcrowd the pan. Work in multiple batches if necessary.
- Preheat the air fryer and set up the temperature to 350°F. Cook for 6 minutes then flip the fries and continue cooking until lightly golden and crispy, about 6 minutes more.
- Transfer the crispy zucchini fries from the air fryer to a plate. Repeat cooking with remaining zucchini.
