Ingredients
The following ingredients have 4 Servings
- 2 large sweet potatoes
- 3-4 tbsp olive oil
- salt and black pepper
- ¼ cup minced garlic (optional)
- ¼ cup minced parsley
Instruction
- Slice each sweet potato in half length ways and then into thin strips the size of French fries.
- Place the cut fries into a large bowl and cover with water. Let soak for 30 minutes.
- Drain the fries well and then rinse. Drain once more.
- Lay the fries on kitchen towel and pat dry.
- Preheat your air fryer to 390° F
- Using the same bowl as you soaked the fries in, take as much as will fit into your air fryer basket without being overloaded and add them to the bowl.
- Drizzle about 2 tbsp of olive oil over them and toss well to coat.
- Season with salt and black pepper and add to the air fryer basket.
- Cook for 10 minutes at 390° then shake the basket to move the fries around.
- Cook for another 8-10 minutes or until the sweet potato fries are golden and crispy.
- Repeat with the remaining fries.
- After all of the fries are cooked you can add them all back into the basket for an extra 2 minutes. This will ensure the first batch hasn't cooled down too much.
- Dump the cooked fries back into the large bowl you were using before and add the garlic and parsley if using.
- Toss well and serve at once.
