Ingredients

The following ingredients have 4 Servings
  • 2 russet potatoes
  • 1 Tbsp olive oil
  • kosher salt, pepper
  • 1 1/2 cups shredded cheese of choice (I used Mexican blend)
  • 4 strips cooked and crumbled bacon
  • Optional: top with sour cream and chives

Instruction

  • Slice the potatoes into 1/4 inch round pieces. Brush each potato round with olive oil and season with kosher salt and pepper on both sides.
  • Place the potato rounds into the air fryer basket for 10 to 12 minutes. Top each with some shredded cheese and crumbled bacon. Turn the air fryer back on for 1 more minute at 400 degrees.Note: Depending on the size of your air fryer, these may need to be done in two batches.
  • Top with sour cream and chives if desired.
