Ingredients
The following ingredients have 6 Servings
- 6 slices bread (You can use gluten free or paleo)
- 2 eggs
- 1/3 cup full-fat coconut milk
- 2 tbsp coconut sugar
- 1 tbsp ghee (melted)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- Optional: powdered sugar and/or maple syrup (to serve)
Instruction
- Preheat the air fryer to 370 degrees F.
- Cut each slice of toast into 3 sticks lengthwise.
- In a bowl, whisk together eggs, coconut milk, coconut sugar, ghee, vanilla extract, and cinnamon.
- Working one at a time, dip each stick of bread into the egg mixture to coat on all sides.
- Generously spray the air fryer basket or rack with cooking oil.
- Lay the coated sticks in a single layer in the basket without touching each other.
- Air fry for 5 minutes, then flip with a spatula, and cook for another 3-5 minutes until golden brown and crispy. Keep a close eye so they don't burn.
- Serve warm, with powdered sugar and/or maple syrup.
