Ingredients
The following ingredients have 6 Servings
- 8 ounces Feta Cheese
- 1/4 cup Red Onion (sliced thin/chopped)
- 1/4 cup Red Pepper (chopped)
- 1 small Jalapeno Pepper ((or 1/4 cup green pepper))
- 12 pitted Cherry Tomatoes (cut in half)
- 10 whole Kalamata Olives (minced)
- 2 cloves Fresh Garlic (minced)
- 1 teaspoon Dried Oregano
- 1/2 teaspoon Sambal Oelek Ground Chili Paste
- 2.5 Tablespoons Extra Virgin Olive Oil (divided)
Instruction
- Slice onions into thin pieces. Chop pepper and jalapeno.
- Mince Kalamata olives and garlic.
- Cut tomatoes in half.
- In a medium mixing bowl, add 2 Tablespoons olive oil, oregano and Sambal Oelek and whisk together.
- Add onions, pepper, jalapeno, olives and garlic and combine.
- Using a baking pan, pour .5 Tablespoon olive oil into bottom and swirl to coat.
- Place feta into baking pan on top of the olive oil.
- Spread vegetable mix over feta.
- Place baking pan in air fryer basket and cook at 300 degrees for 10 minutes. When time is up, wait 5 minutes and then remove pan from air fryer.
- Transfer feta and veggies to serving plate and make sure to pour remaining hot oil over the veggies.
