Ingredients

The following ingredients have 6 Servings
  • 8 ounces Feta Cheese
  • 1/4 cup Red Onion (sliced thin/chopped)
  • 1/4 cup Red Pepper (chopped)
  • 1 small Jalapeno Pepper ((or 1/4 cup green pepper))
  • 12 pitted Cherry Tomatoes (cut in half)
  • 10 whole Kalamata Olives (minced)
  • 2 cloves Fresh Garlic (minced)
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Sambal Oelek Ground Chili Paste
  • 2.5 Tablespoons Extra Virgin Olive Oil (divided)

Instruction

  • Slice onions into thin pieces. Chop pepper and jalapeno.
  • Mince Kalamata olives and garlic.
  • Cut tomatoes in half.
  • In a medium mixing bowl, add 2 Tablespoons olive oil, oregano and Sambal Oelek and whisk together.
  • Add onions, pepper, jalapeno, olives and garlic and combine.
  • Using a baking pan, pour .5 Tablespoon olive oil into bottom and swirl to coat.
  • Place feta into baking pan on top of the olive oil.
  • Spread vegetable mix over feta.
  • Place baking pan in air fryer basket and cook at 300 degrees for 10 minutes.  When time is up, wait 5 minutes and then remove pan from air fryer.
  • Transfer feta and veggies to serving plate and make sure to pour remaining hot oil over the veggies.
