Ingredients
The following ingredients have 4 Servings
- 1 lb. jumbo easy-peel shrimp (raw, uncooked shrimp)
- ¾ cup gluten-free flour blend (or AP flour if not gluten-free)
- 2 eggs
- 1 ¼ cup gluten-free Panko breadcrumbs (or regular Panko breadcrumbs if not gluten-free)
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 1 tsp. Italian seasoning
- ¼ tsp. Kosher salt
- ¼ tsp. pepper
- Non-aerosol, non-chemical high heat air fryer oil - Such as avocado oil, grape seed oil, or peanut oil
Instruction
- Thaw 1 lb. of jumbo easy-peel shrimp (if frozen). Once the shrimp is thawed, remove the peels and tails and discard them. If the shrimp is already raw, simply remove peels and tails and discard them.
- Place the shrimp between two layers of paper towels and pat dry.
- Begin the process of dredging the shrimp: In one bowl, add ¾ cup of gluten-free flour blend (or AP flour if not gluten free). In the second bowl, add 2 eggs. Whisk the eggs with a fork or small whisk. In the third bowl, add 1 ¼ cup gluten-free Panko breadcrumbs (or regular Panko breadcrumbs if not gluten free), 2 tsp. Garlic powder, 2 tsp. Onion powder, 1 tsp. Italian seasoning, and ¼ tsp. Each of kosher salt and pepper. Stir until combined.
- Dip the shrimp (one at a time) first in the flour, making sure it is completely coated. Next, dip the shrimp in the whisked eggs. Lastly, dip the shrimp in the Panko breadcrumb mixture, making sure it is entirely coated. Place the shrimp on a large plate or baking sheet. Repeat with the remaining shrimp.
- Spray both sides of the breaded shrimp with a safe cooking spray for air fryers, such as a non-aerosol high-heat oil such as avocado, grape seed, or peanut oil.
- Place as many shrimp as will fit in the air fryer basket without overcrowding or stacking the shrimp. Make sure there is space between each of the shrimp. Cook the shrimp at 370 degrees Fahrenheit for 4 minutes on the first side and then flip and cook for another 4 minutes on the other side.
- Remove the shrimp from the basket, place it on a clean plate or baking sheet, and repeat with the remaining shrimp. This will likely need to be done in batches so as not to crowd the air fryer.
- Plate, serve, and enjoy!
