Ingredients

The following ingredients have 4 Servings
  • 32 stalks asparagus (trimmed to about 6” or to fit your air fryer)
  • ½ cup almond meal
  • 2 tablespoons coconut flour
  • 1 teaspoon garlic salt
  • ½ teaspoon ground white pepper
  • 1 large egg
  • 2 teaspoons water
  • Avocado oil or olive oil pump spray
  • 3 tablespoons fresh basil about one large handful of leaves
  • 1 teaspoon minced garlic
  • 1 egg yolks
  • 2 teaspoons lemon juice
  • 1/4 teaspoon kosher salt
  • ¼ cup avocado oil

Instruction

  • Wash and dry asparagus and trim to fit your air fryer tray.
  • Mix together almond meal, coconut flour, garlic salt and pepper in shallow dish.
  • Whisk egg with water in another dish.
  • One spear at a time, dip asparagus into egg wash and then dredge in almond flour mixture.
  • Place spears in single layer on tray of air fryer. Note: may need to do more than one batch depending on air fryer capacity)
  • Lightly mist top of “breaded” asparagus spears with avocado oil spray.
  • Insert tray into air fryer and program machine for 8 minutes at 400 F degrees (time could vary slightly based on wattage of machine or size of asparagus).
  • Meanwhile, make dipping sauce by adding basil, garlic, yolks, lemon juice, and salt in small blender. Pulse to combine.
  • Turn blender on and slowly pour in avocado oil and blend until emulsified, approximately a minute. Turn processor off, scrap sides, blend again until all combined and smooth.
  • To serve, drizzle 8 spears with 2 tablespoons of sauce.
