Ingredients
The following ingredients have 4 Servings
- 32 stalks asparagus (trimmed to about 6” or to fit your air fryer)
- ½ cup almond meal
- 2 tablespoons coconut flour
- 1 teaspoon garlic salt
- ½ teaspoon ground white pepper
- 1 large egg
- 2 teaspoons water
- Avocado oil or olive oil pump spray
- 3 tablespoons fresh basil about one large handful of leaves
- 1 teaspoon minced garlic
- 1 egg yolks
- 2 teaspoons lemon juice
- 1/4 teaspoon kosher salt
- ¼ cup avocado oil
Instruction
- Wash and dry asparagus and trim to fit your air fryer tray.
- Mix together almond meal, coconut flour, garlic salt and pepper in shallow dish.
- Whisk egg with water in another dish.
- One spear at a time, dip asparagus into egg wash and then dredge in almond flour mixture.
- Place spears in single layer on tray of air fryer. Note: may need to do more than one batch depending on air fryer capacity)
- Lightly mist top of “breaded” asparagus spears with avocado oil spray.
- Insert tray into air fryer and program machine for 8 minutes at 400 F degrees (time could vary slightly based on wattage of machine or size of asparagus).
- Meanwhile, make dipping sauce by adding basil, garlic, yolks, lemon juice, and salt in small blender. Pulse to combine.
- Turn blender on and slowly pour in avocado oil and blend until emulsified, approximately a minute. Turn processor off, scrap sides, blend again until all combined and smooth.
- To serve, drizzle 8 spears with 2 tablespoons of sauce.
