Ingredients

The following ingredients have 4 Servings
  • Baby potatoes- 500 gms
  • Chopped Raw Mango- 1
  • Chopped garlic cloves- 5 to 6
  • Chopped ginger- 1 tablespoon
  • Curry leaves- 8 to 10
  • Mango juice- 250 ml
  • Mustard seeds- 1 teaspoon
  • Methi seeds- 1 teaspoon
  • Cumin/jeera- 1 teaspoon
  • Heeng- 1 teaspoon
  • Turmeric powder-1 teaspoon
  • Dhaniya powder- 1 teaspoon
  • Red chilli powder to taste
  • Black salt to taste
  • Oil- 2 tablespoon

Instruction

  • Heat oil in a pan, Add mustard seeds, jeera, Methi seeds, Heeng and roast the spices on low flames till start releasing their aroma.
  • Add chopped ginger and garlic and saute on medium flame for one minute.
  • Add raw mangoes followed by turmeric powder, red chilli powder & dhania powder. Mix well all the spices and saute for few seconds.
  • Add baby potatoes, black salt & toss till it mixes well with all the masala.
  • Add mango juice, cover the pan & let it cook on medium flame till potatoes become soft. Do not break the potatoes, try to keep them whole.
  • Serve hot Aamras ke Aloo with your favourite Indian bread
