Ingredients
The following ingredients have 4 Servings
- Baby potatoes- 500 gms
- Chopped Raw Mango- 1
- Chopped garlic cloves- 5 to 6
- Chopped ginger- 1 tablespoon
- Curry leaves- 8 to 10
- Mango juice- 250 ml
- Mustard seeds- 1 teaspoon
- Methi seeds- 1 teaspoon
- Cumin/jeera- 1 teaspoon
- Heeng- 1 teaspoon
- Turmeric powder-1 teaspoon
- Dhaniya powder- 1 teaspoon
- Red chilli powder to taste
- Black salt to taste
- Oil- 2 tablespoon
Instruction
- Heat oil in a pan, Add mustard seeds, jeera, Methi seeds, Heeng and roast the spices on low flames till start releasing their aroma.
- Add chopped ginger and garlic and saute on medium flame for one minute.
- Add raw mangoes followed by turmeric powder, red chilli powder & dhania powder. Mix well all the spices and saute for few seconds.
- Add baby potatoes, black salt & toss till it mixes well with all the masala.
- Add mango juice, cover the pan & let it cook on medium flame till potatoes become soft. Do not break the potatoes, try to keep them whole.
- Serve hot Aamras ke Aloo with your favourite Indian bread
