Ingredients
The following ingredients have 4 Servings
- 3 cups white sugar
- 1 cup butter (softened)
- 1/2 cup shortening
- 5 eggs
- 3 cups all-purpose flour (sifted)
- 2 teaspoons lemon extract
- 1 Tablespoons lemon juice (fresh)
- 1 Tablespoons lemon zest
- 1 cup lemon-lime carbonated beverage (such as 7Up(R))
Instruction
- Preheat oven to 325 degrees F (165 degrees C).
- Generously grease and flour a bundt pan.
- In a large mixing bowl, combine sugar, butter, and shortening using an electric mixer. Beat together until creamy and smooth.
- Add eggs, 1 at a time, to the mixing bowl, mixing well after each addition.
- Stir flour, 1 cup at a time, into the mixing bowl, mixing well after each addition, until batter is smooth and without lumps. But do not over mix.
- Stir in lemon extract, lemon juice, and lemon zest.
- Pouring slowly, while mixing, gradually mix lemon-lime beverage into batter and stop once incorporated. Pour batter into the prepared bundt pan.
- Bake in preheated 325 F. degree oven for 75 minutes, or until a toothpick inserted in the center of the cake comes out clean
- Remove cake from pan immediately so it does not stick. And place on a cooling rack.
- Cool and serve with a sprinkle of powdered sugar!
