Ingredients

The following ingredients have 4 Servings
  • 3 cups white sugar
  • 1 cup butter (softened)
  • 1/2 cup shortening
  • 5 eggs
  • 3 cups all-purpose flour (sifted)
  • 2 teaspoons lemon extract
  • 1 Tablespoons lemon juice (fresh)
  • 1 Tablespoons lemon zest
  • 1 cup lemon-lime carbonated beverage (such as 7Up(R))

Instruction

  • Preheat oven to 325 degrees F (165 degrees C).
  • Generously grease and flour a bundt pan.
  • In a large mixing bowl, combine sugar, butter, and shortening using an electric mixer. Beat together until creamy and smooth.
  • Add eggs, 1 at a time, to the mixing bowl, mixing well after each addition.
  • Stir flour, 1 cup at a time, into the mixing bowl, mixing well after each addition, until batter is smooth and without lumps. But do not over mix.
  • Stir in lemon extract, lemon juice, and lemon zest.
  • Pouring slowly, while mixing, gradually mix lemon-lime beverage into batter and stop once incorporated. Pour batter into the prepared bundt pan.
  • Bake in preheated 325 F. degree oven for 75 minutes, or until a toothpick inserted in the center of the cake comes out clean
  • Remove cake from pan immediately so it does not stick. And place on a cooling rack.
  • Cool and serve with a sprinkle of powdered sugar!
