Ingredients

The following ingredients have 12 Servings
  • 1/2 cup fresh lemon juice
  • 1/2 cup grass-fed unsalted butter (melted)
  • 3/4 cup monk fruit/allulose
  • 3 egg yolks
  • 2 whole eggs
  • 2 tablespoons lemon zest
  • 1/4 teaspoon salt

Instruction

  • Add the eggs into a large mixing bowl and whisk.  Add in the sweetener and mix for 2 minutes or until well combined.  Add the remaining ingredients and mix well. Cook in the microwave for 1 minutes, remove and whisk.  
  • Place back in the microwave to cook for another minute, remove and whisk. Repeat the process 3 more times, for a total of 5 minutes.
  • Allow to cool at room temperature for 10-15 minutes, then store leftovers in an airtight jar the fridge for up to a week, or in the freezer.
