Ingredients

The following ingredients have 5 Servings
  • 1 large round sweet potato, sliced lengthwise into 1/4″ to 1/3″ slices
  • 1 teaspoon avocado oil
  • 1 avocado, mashed
  • 1/2 cup diced cherry tomato
  • 1 tablespoon diced red onion
  • 1 teaspoon fresh chopped cilantro
  • 1 teaspoon lime juice
  • salt to taste
  • 1 tablespoon everything bagel seasoning
  • 1/2 cup blueberries
  • 4 strawberries, sliced
  • 1 teaspoon chia seeds
  • 2 soft boiled eggs (see below for directions)
  • 2 strips of bacon, cooked and diced

Instruction

  • Preheat oven to 425°F.
  • Brush both sides of sweet potato slices with avocado oil.
  • Place on a parchment paper lined baking sheet.
  • Bake for 5 minutes. Flip the sweet potato slices and bake the other side for 5 minutes.
  • Remove from oven and rest.
  • In the meantime, add avocado to a small bowl and mash.
  • Top each slice of sweet potato with a tablespoon of mashed avocado and one of the below toppings.
