Ingredients

The following ingredients have 4 Servings
  • 2 cups granulated sugar
  • 2 cups peanut butter
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instruction

  • Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.
  • Using a mixer (a stand mixer OR hand mixer + large bowl), combine the granulated sugar, peanut butter, eggs, and vanilla extract. This will take about 8-10 minutes. The batter will be crumbly like wet sand.
  • Using a 1 tablespoon cookie scoop, scoop out and roll the dough between your hands.
  • Place each cookie ball on prepared baking sheet and use a fork to gently press a crisscross pattern in the dough. Repeat this step until you've used all of the dough, leaving 2 inches between the cookies.
  • Bake the cookies for about 10 to 12 minutes or until the cookies are no longer as shiny. These cookies will not expand or grow much while baking; this is normal.
  • Let the cookies rest on the baking sheet for 5-10 minutes and then transfer them to a wire cooling rack to cool.
