Ingredients

The following ingredients have 4 Servings
  • 1 lb. lean ground turkey, or grass-fed beef
  • 2 tsps avocado oil, or extra virgin olive oil
  • 1 large white onion, diced
  • 2 fresh garlic cloves, minced or pressed
  • 1 tsp cumin
  • 1/4 tsp chili powder, or to taste
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 15 ounces black beans, rinsed and drained
  • 1.5 cups frozen organic corn
  • 15-ounce jar diced tomatoes, in juice
  • 1/4 cup shredded cheese (optional)
  • a handful of fresh cilantro leaves, chopped
  • 1-2 jalapenos, sliced

Instruction

  • Preheat your oven to 350 degrees f.
  • Heat oil in a large oven-safe skillet over medium-high heat.
  • Add onions and sauté until softens, about 3 minutes.
  • Then, add in minced garlic, ground turkey and all spices, and cook for 5-6 minutes, breaking the meat as you go.
  • Gently stir in the beans, corn, and diced tomatoes with juice, then sprinkle with cheese.
  • Place in your preheated oven and bake for 10-12 minutes, or until cheese is melted and bubbly.
  • Carefully remove from the oven...the whole pan including the handle is very HOT!
  • Garnish with fresh chopped cilantro and jalapeño slices.
