Ingredients

The following ingredients have 4 Servings
  • 30g unsalted butter
  • 3 garlic cloves, finely chopped
  • 1 tbs plain flour
  • ½ bunch oregano, finely chopped, plus extra leaves to serve
  • 300g macaroni, cooked according to packet instructions, drained, refreshed
  • 1 tbs Dijon mustard
  • 2/3 cup (50g) finely grated parmesan
  • 150g Gruyère cheese
  • 150g grated mozzarella
  • 2 cups (500ml) milk

Instruction

  • Preheat oven grill to high. Heat butter in a frying pan over medium heat. Add garlic and cook, stirring constantly, for 2 minutes or until softened but not coloured. Add flour and cook, stirring, for 1 minute. Stir in oregano, macaroni, mustard, parmesan, Gruyère, half the mozzarella and the milk. Season and bring to the boil. Pour into four 300ml baking dishes or a 1.2-litre baking dish. Scatter with remaining mozzarella and grill for 10 minutes or until golden. Serve scattered with extra oregano leaves.
