Ingredients
The following ingredients have 4 Servings
- 1 1/2 pounds pounds of raw shrimp (peeled and deveined)
- 1/4 red onion (sliced)
- 1 yellow pepper (sliced)
- 1 red pepper (sliced)
- 2-3 garlic cloves (chopped)
- 1 tbsp olive oil
- 2 tbsp cilantro (chopped)
- 1 lime (sliced into 4 portions)
- 1 tsp chili powder
- 1/2 tsp cumin
- Trader Joe's Taco Seasoning to taste
- salt and pepper to taste
Instruction
- Preheat oven to 425 degrees.
- Place the shrimp, cilantro, and veggies in a medium-sized bowl.
- Coat with olive oil.
- Sprinkle the seasonings throughout.
- Line a baking pan with foil. Spray with cooking spray.
- Spread the contents evenly throughout the pan.
- Bake for 8 minutes.
- Broil for 2 minutes.
- Remove from the oven. Squeeze fresh lime juice throughout.
- Serve!
