Ingredients

The following ingredients have 4 Servings
  • 8 cups chicken broth
  • 2 cups chicken (, skinless and shredded)
  • 2 cups long grain wild rice (, cooked)
  • 2 carrots (, chopped)
  • 2 parsnips (, chopped)
  • 4 celery stalks (, chopped)
  • 1 teaspoon Kosher salt
  • 1 tablespoon lemon juice
  • 1 tablespoon flat leaf parsley ( , chopped)
  • parmesan cheese (, for topping)

Instruction

  • In a large pot or Dutch oven, heat chicken broth.
  • Add chopped carrots and parsnips. Bring to a low simmer for 5 minutes. Add celery and simmer for 3 minutes longer.
  • Finally, add chicken, long grain wild rice, Kosher salt, lemon juice and flat leaf parsley. Simmer for 5 more minutes.
  • Serve with a topping of parmesan cheese.
