Ingredients
The following ingredients have 4 Servings
- 8 cups chicken broth
- 2 cups chicken (, skinless and shredded)
- 2 cups long grain wild rice (, cooked)
- 2 carrots (, chopped)
- 2 parsnips (, chopped)
- 4 celery stalks (, chopped)
- 1 teaspoon Kosher salt
- 1 tablespoon lemon juice
- 1 tablespoon flat leaf parsley ( , chopped)
- parmesan cheese (, for topping)
Instruction
- In a large pot or Dutch oven, heat chicken broth.
- Add chopped carrots and parsnips. Bring to a low simmer for 5 minutes. Add celery and simmer for 3 minutes longer.
- Finally, add chicken, long grain wild rice, Kosher salt, lemon juice and flat leaf parsley. Simmer for 5 more minutes.
- Serve with a topping of parmesan cheese.
